Mmmm…this a family favorite at the farm!

Chile Colorado

2 pounds stewing beef, cut into 1-inch cubes
1 large onion, chopped
6 garlic cloves, finely minced
1 (28-ounce) can tomatoes, diced
2 (7-ounce each) cans whole mild green (Anaheim) chilies, chopped
1/2 teaspoon oregano leaves
1 teaspoon salt, or to taste
Freshly ground black pepper to taste
Flour tortillas (Gorditas-Style), warmed
  1. In a Dutch oven or large saucepan brown beef cubes on all sides; add onion and garlic and cook until onion has softened.
  2. Add remaining ingredients, bring to a boil and reduce heat. Cover and simmer for 2 to 3 hours, or until beef is fork tender and the sauce has thickened.
  3. Serve with warm flour tortillas.

Makes 6 servings.

Serving Suggestion: Serve with thick, warm flour tortillas, black beans and a green salad.

Unfortunately, it is my job to clean out the dog crate. Its ok though!

The puppies are almost here and I thought I’d share with y’all all about puppy proofing!

Puppy Proofing Your Home

Similar to when your baby turns into a toddler and begins to crawl and discover his/her territory, so does a puppy when it gets to a specific age. Baby proofing devices and cabinet door guards are a must for new puppies.  There are also some things that you can do to puppy-proof your home and make it safe for your little bundle of canine joy to explore and play. Some simple things you can do in your home to make it safer for your puppy include:

1.Cleaners and noxious substances must be stored in a locking cupboard in either the kitchen or a bathroom.
2.Clean up any antifreeze or other garage spills straight away so the puppy won’t lick the area.
3.Pick up anything small enough for a puppy to swallow off the  floor.
4.Avoid having things near that the puppy might chew on, such as newspapers, books, and magazines.
5.Hide all electric wires and cables.
6. Put away shoes, socks and other similar items that tempt your puppy to make a meal out of them.s
7.Storeyour trash or wastebaskets under the sink or within of a cupboard.
8.Vacuum your carpets often to pick up things that might interest your pet.
9.Stow away objects like pens, pencils and other arts/crafts and sewing supplies.
10.Leave your cigarettes somewhere that the dog can’t access. (I only say this because a bunch of the farm hands smoke here!)

The yard is additionally part of your home.  If you would like your pup to be safe and sound, you will keep the yard kept, free of garbage, and free of gaps and holes in the fence.  Do you use chemical lawn treatments?  If you do, ensure that your puppy is limited to that section of the lawn while the chemicals are drying or being absorbed.
